A delicious crock pot chicken recipe for you that’s healthy, easy and cheap.

Crock pot recipes are easy, but you can make this one blindfolded. If you’ve got opposable thumbs, this one’s for you.

If you’re cooking for a little family, this is the perfect amount for 3 servings. Each serving is estimated to be around 329 calories. I live alone and cook for one so, I took this recipe and cut it in half. I ate half of it for dinner then boxed it up for lunch the next day. It’s been a hit every time and gives me time to finish up my day as it cooks.

All you need is three cans of food that you probably have in your pantry.


  • 3 frozen chicken breasts
  • 1 can of Mexicorn
  • 1 can of black beans
  • 4 tbsp of salsa


  • Baby carrots (they become super soft soaking in the hot juices)
  • Any kind of spices that you enjoy in your soup (I added whatever sounded good in my cabinet)

Step One.

Set your crock pot on high if you’d like your meal to be done in 4 hours or low if you’d like to be finished in 8.

Step Two.

Open up the cans of corn and black beans and pour them into the crock pot. Measure out your salsa and pour it in too.

Step Three.

Add the frozen chicken breasts to the crock pot.

Step Four.

Wait. Work out. Catch some Z’s. Do anything you’d like. You have hours to waste.

Step Five.

Once your time goes off, stir your chicken, corn and beans up and serve!


Here are a few of my tips after making this recipe on my own multiple times.

Don’t open the lid of the crock pot while it’s cooking. It will affect the cooking time!

The chicken comes out super moist, especially if you cook it for 8 hours. I usually eat the meal by itself but you can add some brown rice, spaghetti, steamed green vegetables, or French bread. Beware of those little additives like butter or salt. Just a few spoonfuls or shakes can really make a difference when it comes to your health.

Those old chicken recipes can get so old so fast, but this one can be kicked up a notch with how much salsa you choose to add. Also, add peppers or certain spices instead of more salsa for your extra kick if you want to lessen the load on calories.
